DIY Spice Rack: How to dry your own rosemary and thyme

Have you ever bought a plastic packet of fresh herbs at the grocery store, used one sprig, and watched the rest turn into mush in your fridge? It happens to the best of us.
When you grow your own herbs, like rosemary and thyme, you have a constant supply. But to make them last all year (and to create a beautiful, aesthetic spice rack for your kitchen), you should learn how to dry them. It’s one of the most satisfying DIY projects you can do.
The Simple Hanging Method
- Snip a few stems of your rosemary or thyme early in the morning, after the dew has dried but before the sun gets too hot. (This is when their essential oils are the strongest).
- Gather 4 or 5 stems and tie them together at the base using a piece of rustic kitchen twine.
- Hang the little bundle upside down in a dry, well-ventilated spot in your house, away from direct sunlight.
- In about one to two weeks, the leaves will be completely dry and brittle. Simply slide your fingers down the stem to remove the leaves and store them in cute, airtight glass jars.
